All About Beetroot (Beta vulgaris)


Origin of Beetroot
Beetroot is the offspring of wild sea beet (Beta vulgaris subsp maritima), a plant with origins throughout the coasts of Europe, Africa, and India. Daniel Zohary explains in his book, “Domestication of Plants in the Old World,” that beetroot is poorly documented in an archeological context, but is linguistically well identified. One of the earliest documents supporting beetroot cultivation comes from Babylonia circa eighth century BC. Roman and Jewish sources also mention a domesticated form of beetroot near the Mediterranean basin around the first century BC. Other remnants were found dating back to Neolithic Aartswourd in north Netherlands, and Egypt’s third dynasty (2650-2575 BC). India’s own history with beetroot is just as muddled—though wild sea beet has grown on its soil for eons, when and how domesticated species arrived is more mysterious. It’s plausible that Europeans introduced beet strains during trade or invasion.

For centuries, the prized parts of beetroot were its leaves (used in cooking), and root (used in medicines). The Greeks, for example, feasted on the leaves with lentils and beans. They also offered the vegetable on a silver platter to Apollo, god of music, healing, and intellectual pursuits. The Romans were the first to seriously cultivate the plant, and lauded beets for their alleged aphrodisiacal qualities.

Moving forward in time, beet features in several political brawls—not because of its vegetable-like qualities, but rather for its ability to be converted into a sweetener that rivals cane sugar. According to the book, “Agricultural Plants,” the King of Prussia authorized Franz Karl Achard’s research into sugar extraction circa mid 1800s. France was especially interested in this science, as the British implemented naval blockades inhibiting sugar from entering the country’s borders. By 1830, the country was the largest producer of beet sugar; and by 1880, over half of the world’s sugar production derived from beetroot.

Today, 2013 figures from the FAO indicate that beets account for 30 percent of sugar production. India too uses sugar beets for sweetener: A 2013 article published in The Hindu explains how sugar plants from Karnataka to Punjab use beets on account of requiring less water than sugar cane.

 Availability of Beetroot
Beetroot grows plentiful throughout the country, from the hills of South India to the chilly areas up north. Though India is the second largest producer of vegetables in the world, its position in beetroot production and trade is significantly lower. According to 2012 figures published by the UN Comtrade, India ranks 45th in the export of salad beetroot, salsify, celeriac, and radishes, and accounts for a mere .08 percent of global trade. The decentralized nature of the beet industry likely means most of production goes towards domestic consumption.

Despite these small trade figures, beets are an every day pantry item, found in shops large and small. It is not difficult to find these vegetables nestled between carrots and cauliflower on pushcarts rolling throughout the streets. Few veggies are more ubiquitous than the beetroot. Indeed, several of India’s cuisines feature this vegetable.

In 2007, Swiss-based bioengineering company, Syngnetna, ran test groups of its genetically modified sugar beets in Pune and Ambad. Whether or not these beets become commonplace is a decision left to government regulators and the staunchly anti-GMO citizenry.



Taste
To taste a beet is to taste the earth—though some disdainfully equate this with a “dirty” taste, others appreciate its mild bitterness mixed with sweetness. Like carrots, beets are one of the sweetest vegetables. Many juicers appreciate beet’s sweetness as a way to temper the pungency of greens. As a tip, using liberal amounts of orange, lemon, or limejuice will brighten beet’s earthiness. Adding citrus juice will also highlight the vegetable’s underlying acidity.

Beets have a texture similar to carrots and turnips: Dense, fibrous, and difficult to chew. To make beetroot into more manageable bites, grate the raw vegetable or soften it through cooking.

Do not discard the beet’s green, leafy top—this mildly salty portion of the vegetable is highly nutritious and may be cooked similar to spinach. Use only the leaves and discard the stem, which is usually unpleasant and too fibrous.

Health Benefits
India has been recording beetroot’s medicinal uses for centuries. In 1833’s “Taleef Shereef, or Indian Medica,” author Muhammad Sharif Khan lists benefits including acting as a stomachic, laxative, remover of viscid mucus and bile, and combatting agent of “dry emaciation.” Beets are also well known for the blood promoting and liver cleansing qualities. As explained in the book, “The Way of Ayurvedic Herbs,” beets possess the ability to treat hemorrhoids on account of the vegetable’s ability to kickstart the liver into producing more bile.

--According to a 2013 study published in the Asian Journal of Pharmaceutical and Clinical Research, beetroot extracts illustrated potent antiproliferative and immunomodulatory effects when tested against breast cancer cells.
--A 1999 study published in Scielo reveals that beet extracts displayed antiviral activities when tested against strains of herpes simplex virus type 2.
--As per a 2001 study published in the American Journal of Gastroenterology, beetroot’s compound, betaine, illustrated significant improvement in the biochemical and histological markers in patients with nonalcoholic steatohepatitis.

Note: It is perfectly normal to experience discoloration of urine and feces after consuming beetroot. Reddish urine is known as beeturia, and happens in roughly 10 to 14 percent of the population. However, one possible concern is that those who have urine discoloration may have iron deficiencies, malabsorption, and low stomach acid. Another less startling theory is that it’s simply because of one’s genetics.



Selecting Beets
Choose firm beets with no obvious soft spots. It should be hard, though some smaller beets are softer. Avoid shriveled, sunken beets as this indicates that the beetroot has spoiled—consequently, its juice will be less robust.

Preparation Methods
Lop off the top of the beet: If its leafy top is still in fact, set aside and use the leaves in subsequent recipes. If using in salads, lop off the top; otherwise, leave the top intact for cooking—this keeps the juices preserved in the root. Wash the beets thoroughly with a coarse sponge or cloth, and only do so if preparing immediately. Cleaning prematurely results in undesirable softness.

Next, peel the beets, ideally with a spiral slicer. Once the beets are peeled, it’s possible to grate for use in raw salads, or to cut into eighth wedges. Note: some prefer to cook the beets first, and then peel them. The heat will make it easier to remove the skin, but reside also coats the pots and pans. At the very least, scrub thoroughly.

To boil beets, simmer for 15 minutes in a covered pan—the core should still be hard, but easily pierced with a fork or knife. Drain and rinse will cool water. Wait until the beets have cooled if using them in a cold dish.

To steam beets, add two inches of water to the pot, place the beets in the steamer, and cover. Leave the beats to steam for roughly 30 minutes to an hour, depending on the quantity.

To bake or roast beets, set the oven at 375 F, and rest them directly atop the oven grate or wrap in aluminum foil. Or, add sliced beets to a lightly oiled baking sheet. It’s possible to add other seasoning to the tray, such as chopped onions, olive oil, lemon juice, potatoes, and turnips.
Note: Beets stain other foods quite easily. If worried about turning an entire dish bright magenta, add beets to the meal right before serving.

Note: Like pomegranates, cut beets stain everything they touch, from hands to cutting boards to clothing. Use lemon juice and baking soda to remove the juice. 



Recipe Ideas and Uses
--Pair beetroot juice with orange, carrot, apple, and a liberal amount of lemon juice. Beets and grapes are a great combination if juicing dark leafy greens.
--Make a grated beetroot salad: combine grated carrots and grated beets with raisins, paprika, cumin, cinnamon, nutmeg, salt, cayenne pepper powder, lemon juice, honey, and finely chopped mint.
--An Indian variation of this salad is to combine shredded beets with roasted peanuts, cilantro, green chili, onion, lemon juice, salt, and cumin.
--Add quarter chunks of beetroot to any lentil salad recipe.
--Make a beetroot dip similar to hummus by blending roasted beets with garlic, chili powder, honey, olive oil, and a spice mix of thyme, sesame seeds, oregano, salt, marjoram and sumac. Or, simply blend roasted beets into any hummus recipe—it adds color, sweetness and flavor, along with fewer calories if substituted for chickpeas.
--Make a beetroot platter by laying slices of steamed beets on a plate. Drizzle with lime juice and olive oil, and then layer with sliced oranges or grapefruit, pomegranate, pistachio or almond, and mint.
--Create a savory beetroot soup by first roasting beets, potatoes, and carrots tossed in olive oil and balsamic. Separately, sautee onions until golden brown, and then add garlic, ginger, chili powder, and vegetable broth. Once the vegetables have finished roasting, add to soup pot and then blend.

--Make a beetroot bruschetta by steaming beets, and then setting aside to cool. Then, dice the beets. Combine with diced tomatoes, basil, red onion, salt, pepper, chopped walnuts, and olive oil. Leave to marinade before adding to crackers or baguette slices.
--Use beetroot juice as a natural food coloring agent.
--Dehydrate rings of beetroot to make chips.
--Add steamed beetroot puree to baked goods: they create moistness, add color, and reduce the calorie content.

Note: Lemon juice and vinegar brighten the color of beets, whereas salt diminishes it.

All About Bathua (Chenopodium album)


Origin of Bathua
Bathua--also known as lamb's quarters--is an ancient plant, related to both beetroot, spinach, and quinoa. According to the book, “Food in China,” bathua has been a food source of several old civilizations: it was likely cultivated in Neolithic Europe (7,000-1700 BC), and was also found in China circa 5th century AD. Most botanists agree that its origins are indeed in Europe, and evidence supports the claim that hunter-gatherers ate bathua throughout the Bronze Age and Iron Age.

A number of interesting anecdotes describe bathua’s unusual history: For example, Neolithic architects discovered bathua seeds in early Britain’s earthen pots. Scandinavia’s Tollund Man—a mummified corpse of a person thought to live circa 4th century BCE—had lambsquarters seeds found in his stomach at his execution site in a Danish bog. Many other accounts mention it as a source of food for the early Vikings, and Peter Kalm’s 1749 writings describe the ways in which Scandinavians boil the greens in meat-infused water. Even Napoleon Bonaparte relied on bathua seeds to feed his troops during lean times. Curiously, archeological remnants reveal that North American Blackfoot Indian tribes were using the weed in the early 1600s. This predates any known voyages from the old world to the new world. How and when bathua spread between continents is unknown.

Bathua has an undeserved reputation, given its wondrous nutritional profile: one of its many names includes “pigweed,” owed to the belief that it’s best suited for pig food. In most countries it’s regarded as a pest, as it grows prolifically in ravines, near plantations, and in the crevices of sidewalks. Indeed, it is an unwanted guest in many gardens. Despite man’s efforts to eradicate their presence with the use of noxious pesticides and herbicides, lamb’s quarters continue to be more resilient and adaptable than humans (who at this point would do best to welcome the plant into their kitchen pots)—the plant is here to stay.



Availability of Bathua
Bathua is readily available during India’s winter months at elevations up to 4,700 meters. Some sources, such as the “Handbook on Herbs Cultivation and Processing,” also list the plant as a summer crop in irrigated areas. Not many in India grow the plant commercially, though the locals of the Kulu Valley and Rajasthan such groups doing so on a small scale. In Shimla, for instance, they use many parts of bahua—the seeds double for rice and oatmeal, and are also added to dal. It is more common to find bathua in the north from Sikkim to Kashmir, but it is also available in the south.

When in season, produce shops sell bundles of the greens. They are a great alternative when other greens like methi and amaranth are out of season, and bathua also tends to be an inexpensive source of nutrients. If searching for the plant, keep a close eye out for their blunt, arrow-shaped, ridged leaves.

Taste
Bathua has an earthy, mineral-rich, astringent salty taste comparable to spinach. They are also more dense and fibrous, as opposed to crisp and juicy. The young, tender leaves may be used in salads, but the older leaves are best suited for cooked recipes on account of their bitterness. Liberally tossing in lemon juice may reduce its potent flavor. That said, bathua is by no means delicate: Only those who enjoy the darker, bitter greens such as kale and spinach will be inclined to appreciate lambsquarters.

Health Benefits
Many groups in India use bathua medicinally. According to the book, “Indian Medicinal Plants,” bathua acts as a laxative, anthelmintic for hookworms and roundworms, and as a blood purifier. When prepared as an infusion, it manages hepatic disorders, spleen enlargement, biliousness, burns, and ulcers. The book, “Handbook on Herbs Cultivation and Processing” explains that that the ground plant mixed with alcohol is also applied topically to treat rheumatism and arthritis.

Regrettably, most scientific studies test the efficacy of pesticides against this lovely plant. A few, however, touch upon its nutritional and medicinal properties:
--According to a study published in the 2007 Journal of Ethnopharmacology, lamb’s quarters possess anthelmintic activity when tested on nematodes.
--A 2012 study published in the Journal of Experimental and Integrative Medicine explains that bathua illustrates hepatoprotective benefits and thus holds potential as a therapeutic agent.
--As per a 2009 study published in the Oxidative Medicine and Cellular Longevity, bathua leaves inhibited the growth of breast cancer cells, and may be a key anti-breast cancer bioagent.

Selecting Bathua
When inspecting bathua, look for a slightly white, dusty coating—this is perfectly natural, and is a hallmark feature of the plant. The leaves lose this powdery residue upon maturity. If consuming raw, look for younger leaves. Otherwise, opt for firm, dense leaves with no obvious signs of wilt.

If foraging for the plant, avoid ones growing next to commercial farms. The leaves may be coated with pesticide residues.

Preparation Methods
First, wash the greens to remove the dirt and grit. Next, remove the leaves from the stems—pick the young, tender leaves if using in a raw recipe; otherwise, they may be mixed with the mature ones.

To make a bathua paste for use in many traditional Indian recipes, steam the leaves until wilted, strain any water, and then blend until smooth. Add water only if necessary.



Bathua Recipe Ideas and Uses
--Use bathua as a spinach substitute.
--One of the simplest dishes for this green is lightly flavored steamed bathua: steam tender leaves until brightly green but not mushy. Plate the greens and drizzle olive oil, lemon juice, fresh garlic, and a bit of soy sauce.
--Make a raw vegan soup by blending soaked cashews, tomato, garlic, onion, lime, olive oil, dates, salt, bathua, butterfruit, and capsicum. To make a cooked soup, heat onions and garlic in olive oil until golden brown. Add salt and pepper, and then toss in plain soymilk with the greens. Blend until smooth.
--If in possession of a blender powerful enough to liquefy greens, use as part of a green smoothie. It pairs best with sweet fruits and veggies, such as beets and grapes.
--Add the whole leaves to lentil soup recipes near the last twenty minutes of the preparation.
--As is tradition in this Punjabi dish, add the leaves to sarson da saag—a greens puree served with a corn-based roti. To make, boil spinach, mustard greens and bathua with a hint of ginger in a pressure cooker for 8 whistles. Once cooked, blend into a puree. Separately, blend tomatoes and green chili. Heat oil and garlic until golden brown, then add spices: turmeric, coriander, chili, and salt. Add the tomato puree, and thicken with cornstarch. Add the greens puree, and heat. Serve with the corn rotis.
--A similar variation is bathue ki sabji, which are basically spicy potatoes covered in a gravy made from bathua paste.
--Mix bathua puree into cashew curd recipes, and serve alongside rotis.
--Add the boiled, pureed bathua leaf paste to any dosa or poori batter.
--Make a bathua spread to eat with red pepper strips or cucumbers: in a food processor, mix the leaves, garlic, onion, avocado or soaked cashews, toasted almonds, olives, cayenne pepper, and a dab of soy sauce.
--Add finely chopped bathua to stuffed mushroom recipes: include salt, pepper, chopped walnuts, olive oil, and olives as additional ingredients.
--Include bathua in a tofu scramble: crumble medium-firm tofu and sauté it in olive oil, garlic and onions. Add finely chopped greens, as well as any Italian seasoning (basil, oregano, rosemary) or Indian flavors (cumin, turmeric, curry).
